JC Tongco’s passion for wines began with a simple curiosity about why some wines are more expensive than others. This inquisitiveness sparked during his time as a bartender, where he frequently wondered what distinguished one bottle from another. His keen interest eventually caught the eye of a seasoned sommelier at his previous workplace, who recognized his potential and took him under their wing as a mentor.
As the Head Sommelier of Okada Manila, JC manages all aspects of wine selection and service, from purchasing and constructing wine lists to guiding guests through exquisite wine pairings. He believes a good sommelier must possess deep knowledge of wines and an unwavering commitment to lifelong learning. Every year, new wines and producers emerge, requiring continuous study of harvests, tasting notes, and vineyard conditions.
JC’s dedication to his craft is reflected in his achievements. He secured 2nd place in the inaugural Philippine Sommelier Competition in 2017 and holds several certificates from the Wine & Spirit Education Trust (WSET). His ambition is to complete all certifications from the Court of Master Sommeliers.
Under JC’s stewardship, La Piazza, Okada Manila’s signature Italian restaurant, received the prestigious Wine Spectator’s 2024 Best Of Award Of Excellence, affirming its status as one of the leading wine destinations in the Philippines. This recognition validates the hard work and patience invested in curating an exceptional wine experience.
